    In today’s increasingly complex food environment, making healthy choices can be challenging for many consumers. Habits, time constraints, and the appeal of ultra-processed foods often lead to eating decisions that fall short of nutritional recommendations.

    Institutional dining settings, particularly in academic environments, offer a strategic opportunity to positively influence food choices at scale.

    The ALI-IMPACT project aims to identify and activate psychological and marketing levers that encourage healthier food choices.

    To achieve this, the project follows a multi-stage approach:

    • Understand consumer expectations and eating behaviours.
    • Analyse these trends at a larger scale.
    • Test practical interventions in real-world settings.
    • Develop actionable recommendations for implementation.

    The initial research identified several consumer profiles and highlighted key factors influencing food choices, including how dishes are presented, the clarity of menu information, and the dining environment.

    These findings provide a strong foundation for testing practical interventions in institutional dining settings and measuring their real-world impact on eating behaviours.

    Ultimately, the project will deliver practical recommendations and tools that can be directly implemented by institutional food service providers.
